Well, I know adding sockets Via the cubes will add defence to an eth armour, becuae I've done it and it works good. But does it work on non Eth armours?

basically, when you put an ethereal armor into the cube and use the cube recipe it gets the +50% enhanced defense mod that ethereal adds. note that you cannot use a +15% superior armor as only normal ethereal armors can be cubed. I've done this on an ethereal high defense sacred armor and made a stone out of it. 4.9k defense. was great on my merc. =P

yes. it was a bug before that when you upped eth unique armors that the ethness didnt carry over. when they fixed that bug (1.11 i think) this one came into being. works on all armors as well not just body.
